I hate cauliflower. I’ll just be honest. I don’t like it. So when my wife created this recipe the last thing I was excited about was trying it. She talked about it all day. You know how it is. You’re really excited about something you found on Pinterest that inspired you to create something that you hope will be tasty?! It was that kind of day. I wasn’t really looking forward to the end result until she said it’s a cauliflower pizza crust. My ears perked up a little, and I started to listen (yea I’m a guy forgive me).
The idea behind this pizza crust is simple. No Gluten. She started by by chopping up the cauliflower and steamed it in a bowl in the microwave with just 2tbs of water. The goal is to get it soft quickly. Place the cauliflower into the processor, puree it. Then you will either need to put the pureed cauliflower into a cheese cloth or paper towels to squeeze out the excess moisture. Put the cauliflower and the other ingredients into a bowl and stir until well blended. At this point the dough will be a mushy consistency. You will need to par bake this before adding toppings about 7-8minutes. This type of dough isn’t stretchy, because it doesn’t have any gluten. So it won’t be like your normal pizza crusts. Add your toppings after the par bake at 350 until desired crispiness.
So after she lays it out, I picked out my toppings. Yes I’m boring, just cheese and pepperoni. I don’t want to get to ingredient heavy when I’m trying a new thing, just in case I’ve got to let the dog eat it (just being honest!) Lacy put it in the oven and I started smelling that divine fresh pizza smell, you know the one that makes your mouth water and your stomach ache? She pulls it out of the oven and I was pleasantly surprised to see a real pizza. Some of these ‘alternatives’ are visually, somewhat off-putting. We grab our plates, sat our three year old down at the table and told her we had pizza, to which she happily smiled, grabbed her fork and say, ‘I want pizza!’. I cut it, served it and now the real test, I tasted it.

It was DELICIOUS! I admit, I was skeptical and somewhat ready to call Papa John’s if this failed. Because there was so much cheese in the crust, it was crispy, but it was also fluffy. It tasted and felt like real pizza. It wasn’t chewy like regular pizza dough, but it held together just fine and really hit the spot. If you served this to an unwitting spouse, I bet they would never guess it was cauliflower.
All in all this was yummy. It’s a great alternative to pizza crust and you could even make cauliflower garlic bread….YUM! Maybe I’ll try that next!
